Quinoa & Veggie Soup

I set out to make a soup inspired by Cedar's Edamame Salad, with edamame, roasted corn, roasted red peppers, and dried cranberries. Unfortunately, edamame was nowhere to be found. Still in the mood for soup, I ended up making this lovely creation. The quinoa adds a good texture and the cayenne adds a nice kick. Xavier said he approved and proceeded to eat three heaping spoonfuls, but he said to not add the "boyfriend approved" label since he's not sure most guys would give this a thumbs up.

While you admire my lovely photo, I also would like you to marvel with me over the fact that this was taken with my iPhone. Pretty damn awesome.


Ingredients
Makes about 5 servings-ish (how's that for accuracy?) 
  • 1 tbsp olive oil
  • 1/2 medium sweet onion, roughly chopped
  • 1 clove garlic, minced
  • 1 cup carrots, diced
  • 1/2 cup celery, 
  • 1 medium red bell pepper, seeded and chopped
  • 1 cup frozen green peas
  • 1 can cream style corn
  • 32 oz reduced sodium chicken broth (or vegetable broth)
  • 1/2 cup red quinoa
  • 1/2 tbsp basil
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper

Directions
  • Heat olive oil in large pot on medium/high. Saute onion until just translucent. Add garlic and stir 15 seconds. 
  • Add carrots, celery, and red bell pepper and stir occasionally for 5-10 minutes.
  • Stir in frozen peas, cream corn, chicken broth, quinoa and seasonings.
  • When pot reaches a boil reduce heat to medium/low, and cover. Simmer for 15-20 minutes or until quinoa is cooked and veggies are soft.

Oooh, this looks good. I've only tried quinoa once and was not crazy about it, but I wanted to try a different recipe before passing judgment.

What is the difference between the Red Quinoa and just the regular Quinoa?
Does it matter which one you use?
